What are the food-hygiene requirements for drainage in a commercial kitchen?

Food premises need drainage facilities that are adequate for their intended purpose and designed and constructed to avoid contamination. This is a premises food-hygiene requirement, not simply a plumbing or maintenance issue.

The drainage arrangement should support hygienic operation of the premises. Capacity, condition, layout and the direction in which wastewater can flow all matter where a failure could expose food, equipment or clean areas to contamination.

Can drainage run from a contaminated area towards a clean food area?

Open or partly open drainage channels should be designed so that waste does not flow from a contaminated area towards or into a clean area, particularly where higher-risk food is handled.

Managers should consider the real route wastewater would take during normal cleaning and during a blockage or overflow. A drain that appears acceptable in normal use can still create a food-safety risk if wastewater can spread into ready-to-eat preparation or clean equipment areas when the system is overloaded.

Do commercial kitchen floors need drainage?

Food-room floors must be maintained in sound condition and be easy to clean and, where necessary, disinfect. Where appropriate, adequate surface drainage should be provided.

That does not mean every commercial kitchen is legally required to have a particular number or type of floor drain. The need and design depend on the premises and activities. Wet-production or wash-down areas may need different drainage from a relatively dry preparation area.

What should floor drains, channels and gullies be like?

Drains, channels and gullies should be positioned and maintained so they do not become contamination, odour or pest problems. They should allow the surrounding area to be cleaned effectively and should not routinely leave standing wastewater in food-handling areas.

What should you do if sewage or wastewater backs up into a kitchen?

Treat sewage or contaminated wastewater entering a food area as a potentially serious contamination incident. Stop activities in affected areas where food safety cannot be maintained, protect or isolate exposed food and food-contact equipment, and arrange competent repair of the cause.

Affected areas and equipment may require thorough cleaning and disinfection. Food that may have been contaminated should not be used simply because the packaging or product looks normal. Record the incident, stock decisions, cleaning, repair and checks made before the affected area returns to service.

Can a kitchen stay open during a drainage failure?

It depends on the location, extent and consequences of the failure. A minor problem isolated from food operations may be manageable, while sewage backflow, loss of essential drainage or contaminated wastewater entering food areas can make safe operation impossible.

The decision should be based on whether hygienic food preparation, handwashing, cleaning, waste disposal and contamination control can genuinely continue. Where necessary, restrict or stop the affected operation until the drainage system is restored and the area is safe.

What drainage checks and records are useful?
