Safer Food Better Business, usually shortened to SFBB, is a Food Standards Agency food-safety management approach aimed at helping relevant smaller food businesses put safe working methods into practice and demonstrate how they manage food safety.

What does SFBB contain?

The FSA instructs businesses using SFBB to work through the pack, complete the safe methods that apply to the business and then make sure those methods are followed. The diary is used as an ongoing record.

The pack is intended to be practical: it combines safe methods, management information and a daily diary rather than asking businesses to produce paperwork with no operational purpose.

Do you need lots of daily records with SFBB?

The FSA says no: as a minimum within SFBB, the diary needs to be filled in each day. Depending on the size and nature of the business, additional records may be needed to demonstrate that food is being made safely.

That means businesses should avoid confusing “more forms” with “better compliance”. Additional monitoring should have a reason and support the food-safety controls used by the kitchen.

How do temperatures fit into SFBB?

The FSA describes a temperature probe as the best way to make sure relevant processes such as cooking, reheating, hot holding or chilling are safe, and points SFBB users to the “Prove it” safe method.

The exact monitoring approach should reflect the business and its food-safety system. Digital temperature records can make repeated checks and historical evidence easier to organise.
