Why E. coli cross-contamination needs strong controls
Certain strains of E. coli, including Shiga toxin-producing E. coli, can cause serious illness. Raw food and contaminated surfaces can transfer harmful bacteria to ready-to-eat food that will receive no further cooking step.
The safest approach is to prevent contamination rather than rely on cleaning up afterwards. A business food-safety system should identify where raw and ready-to-eat activities could cross and put effective controls in place.
Separate raw and ready-to-eat food effectively
Physical separation is the strongest control where it is practical. Raw food should not contaminate ready-to-eat food through storage, preparation areas, equipment, utensils, hands, cloths, packaging or splashes.
Where a business cannot permanently separate activities, any alternative arrangement needs to be demonstrably effective, managed through the food-safety system and supported by suitable cleaning and disinfection between uses.
Equipment can become a contamination route
Equipment used for raw food can transfer contamination into ready-to-eat food, particularly where it has complex surfaces, joints or components that are difficult to clean effectively. Businesses should consider whether equipment can be safely shared at all.
Cleaning and disinfection are different jobs
Cleaning removes food, grease and dirt. Disinfection reduces microorganisms to a safer level. Where disinfection is required, the surface normally needs to be cleaned first so the disinfectant can work effectively.
Use products suitable for the intended food-area task and follow the manufacturer instructions, including dilution and contact time. A quick spray-and-wipe is not automatically an effective disinfection process.
Control cloths, hands and movement
Reusable cloths and cleaning equipment can spread contamination if they move between raw and ready-to-eat areas. Handwashing is also essential after handling raw food and before handling ready-to-eat food.
Workflow should minimise unnecessary movement of contaminated packaging, utensils, staff and waste through clean or ready-to-eat areas.
Storage separation matters too
Cross-contamination controls begin before preparation. Raw foods should be stored so leaks, drips or contaminated packaging cannot affect ready-to-eat food. Suitable containment and positioning within chilled storage are important practical controls.
The same principle applies during defrosting: raw thawing liquids must be contained and prevented from contaminating other food or surfaces.
Do not wash raw chicken
Washing raw chicken can spread bacteria through splashing onto sinks, surfaces, equipment and nearby food. Cooking is the control step for bacteria on raw chicken; washing it is not a food-safety treatment.
What to do after a cross-contamination failure
If ready-to-eat food may have been contaminated by raw food, equipment, hands or the environment, protect customers first. Isolate affected food where appropriate, assess whether it must be discarded, restore hygienic conditions and record meaningful corrective action.
Repeated failures should trigger investigation of the cause, such as poor kitchen layout, shared equipment, inadequate cleaning methods, damaged surfaces, weak supervision or insufficient training.
