What is cross-contamination in a commercial kitchen?

Cross-contamination happens when harmful bacteria or other hazards are transferred from one food, person, surface or piece of equipment to another. A particularly important risk is transfer from raw food to ready-to-eat food because the ready-to-eat food may receive no further cooking step to remove harmful bacteria.

The Food Standards Agency identifies cross-contamination as one of the four main areas of good food hygiene and publishes specific guidance for businesses handling raw and ready-to-eat foods.

Separate raw and ready-to-eat food

The strongest control is physical separation. FSA guidance describes permanent separate rooms as the most effective option where this is appropriate, followed by a permanently designated clean area. Where those options are not practicable, carefully managed time separation may be possible if effective cleaning and disinfection takes place between activities.

The controls must suit the actual operation. A small café and a large production kitchen may need different arrangements, but both need a system that effectively protects ready-to-eat food from contamination.

Use equipment in a way that controls contamination

Control contamination through hands and clothing

Disposable gloves do not replace hand hygiene. If gloves touch raw food and then ready-to-eat food, they can transfer contamination in the same way as hands.

Where surfaces or equipment may have been contaminated by raw food, cleaning must remove dirt and food residues and an appropriate disinfection step must reduce harmful microorganisms to a safe level. Prevent cross-contamination during storage
