What is the food-hygiene requirement?
Food Standards Agency guidance says food-business premises must have adequate ventilation. The premises should also be designed and maintained so that good hygiene practices can be followed and contamination is controlled.
There is not one extraction specification that suits every restaurant, pub, hotel or production kitchen. The system needs to be appropriate for the cooking equipment, output, room layout and risks.
Ventilation should support a hygienic kitchen
Poor ventilation can contribute to excessive heat, steam, grease deposits, condensation and deterioration of surfaces. These conditions can make cleaning harder and can undermine the condition of the premises.
Avoid airflow from contaminated areas towards clean areas
Ventilation should not create an avoidable contamination route. Food-hygiene requirements specifically recognise the need to avoid mechanical airflow from contaminated areas towards clean areas.
Kitchen layout, extraction and make-up air should therefore be considered together, particularly where raw and ready-to-eat activities take place in different areas.
Can condensation become a food-safety problem?
Yes. Condensation above food, preparation surfaces or clean equipment can become a contamination risk. Repeated condensation can also contribute to mould, damaged finishes and surfaces that become difficult to keep hygienic.
If condensation is recurring, simply wiping it away is not a complete solution. Investigate ventilation performance, steam generation, room temperature, building fabric and equipment use.
Extraction filters and canopies need cleaning
Grease filters, canopies and accessible extraction components should be kept sufficiently clean and maintained so that the system can operate effectively and does not become a source of contamination.
Cleaning frequency should be based on the actual operation rather than an invented universal interval. A high-output frying kitchen may need a different regime from a low-volume operation. Follow equipment and specialist instructions where applicable.
What if the extraction system is damaged or not working?
Assess the effect on food safety and whether cooking can continue safely. Heavy smoke, steam, uncontrolled condensation or grease contamination may mean particular equipment or processes should stop until control is restored.
Record significant defects and corrective action. Repeated failures should feed into the premises maintenance programme rather than being treated as isolated cleaning issues.

Food hygiene ratings consider the cleanliness and physical condition of facilities and the building, which includes whether the layout and facilities allow good food hygiene. Ventilation can therefore matter during inspection as part of the overall condition and suitability of the premises.
