A commercial dishwasher or glasswasher can be an effective way to clean and disinfect plates, utensils, equipment and glassware, but only when it is loaded correctly, reaches the operating conditions intended by the manufacturer and is kept clean and maintained. There is not one universal statutory rinse-temperature number that applies to every commercial machine, so the control should be based on effective disinfection and the machine's validated specification.

Why are commercial dishwashers useful for food safety?
FSA Safer Food Better Business guidance says that dishwashers wash items thoroughly at a high temperature and are a good way to clean equipment, kill bacteria and remove allergens. They can provide a more consistent process than ad-hoc manual washing when the machine is suitable for the items being cleaned.
The result still depends on the whole cycle: pre-scraping where appropriate, correct rack loading, suitable detergent and rinse aid, unobstructed spray arms, adequate water temperature and pressure, and sufficient cycle performance.
Is 82°C a legal dishwasher rinse temperature?
Do not treat 82°C as a universal legal minimum for every UK commercial dishwasher or glasswasher. Published catering practice often uses high-temperature final-rinse settings, and some machines or sector procedures may specify particular temperatures, but the legal requirement is effective cleaning and disinfection rather than one blanket machine-display number.
Use the manufacturer’s operating specification and the food-safety procedure established for your machine. If your dishwasher is designed to achieve thermal disinfection at a stated wash or rinse condition, investigate any cycle that fails to achieve that condition.
Load the machine so water can reach every surface
FSA SFBB guidance warns against overloading dishwashers because overloaded machines may not wash effectively. Plates, utensils, containers and removable equipment parts should be positioned so wash water can reach contaminated surfaces and drain away.
Separate dirty and clean workflow
The dishwashing area should avoid re-contaminating clean equipment. Dirty returns, scraping and loading should flow towards the machine, while clean unloading and storage should be protected from dirty crockery, waste and splash.
Clean hands or appropriate handling practices matter at the clean end of the machine. A successful hot cycle can be undermined if clean plates or utensils are then placed on a contaminated surface.
What should staff check on a dishwasher or glasswasher?
Checks should reflect the machine and manufacturer instructions rather than creating meaningless paperwork. Useful checks include whether the machine reaches its normal operating condition, detergent and rinse-aid systems are working, wash arms and filters are clean, racks are intact and the finished items are visibly clean.
Where your food-safety procedure uses a displayed wash or rinse temperature as a control, record or verify it at an appropriate frequency and act on abnormal readings.
What if the machine is not reaching its normal temperature?
Stop treating the machine as an effective disinfection control until the problem has been assessed. Check simple causes allowed by the manufacturer, such as warm-up time, blocked filters or jets and chemical supply, then escalate defects for repair.
Items from a failed or doubtful cycle should not automatically be assumed clean. Rewash them through a functioning validated process or use an appropriate alternative cleaning and disinfection method.
What if the dishwasher breaks down during service?
Have a realistic contingency method before the machine fails. FSA SFBB guidance says that where there is no dishwasher, plates and equipment can be washed in hot soapy water using an appropriate bactericidal detergent, with controls to prevent raw-to-ready-to-eat cross-contamination.
If the same manual sink has to be used for equipment from raw and ready-to-eat processes, FSA guidance says the water should be changed and the sink, taps and fittings thoroughly cleaned and disinfected using a two-stage clean between uses. Capacity matters: if the alternative method cannot safely keep up with service, restrict the operation rather than allowing dirty equipment to accumulate.
Dishwashers, glasswashers and allergens
Mechanical washing can help remove food residues and allergens, but allergen control should not rely on a temperature number alone. Items need to be visibly clean and the wash process must be effective for the equipment and food soil involved.
Where a business makes a specific allergen or free-from claim, the cleaning method should form part of the documented cross-contact control and should be reviewed if residues remain after washing.
Maintenance and cleaning of the machine itself
A dishwasher can only clean effectively if the machine is itself kept in suitable condition. Filters, strainers, wash arms, jets, door seals and internal surfaces should be cleaned at appropriate intervals and inspected for damage or scale.
Follow the manufacturer’s cleaning, descaling and servicing requirements. A machine that repeatedly fails to reach its normal operating condition, leaves visible debris or produces poor wash results needs corrective action rather than repeated sign-off.
What records are useful?
Records should support the actual controls used by the business. Depending on the operation, this may include machine opening checks, temperature or cycle verification where relevant, chemical checks, cleaning of filters and wash arms, service or repair records and corrective actions after a failed cycle.
