Why vacuum packing needs specific food-safety controls
Vacuum packing removes air from around food and creates reduced-oxygen conditions. That can extend quality and shelf life, but it also changes which microorganisms can grow. The Food Standards Agency specifically identifies non-proteolytic Clostridium botulinum as a hazard that must be considered in relevant chilled vacuum-packed and modified-atmosphere foods.
Vacuum packing should therefore be treated as a food process within the business food-safety management system, not simply as a different way to wrap food.
Put the real process into HACCP
The HACCP assessment should reflect what the kitchen actually does: the food and recipe, preparation, packing, cooking where applicable, chilling, chilled storage, intended shelf life and how the food will finally be used.
Changing a product, recipe, pack size, cooking process, storage temperature or shelf life can change the hazard assessment. A safe method copied from a different product is not automatically valid for yours.
Understand the chilled shelf-life issue
FSA guidance for relevant vacuum-packed and modified-atmosphere chilled foods explains a 10-day shelf-life rule in relation to non-proteolytic Clostridium botulinum. Where a relevant product has a shelf life greater than 10 days, additional controlling factors or hurdles are required.
There are important scope details and exceptions in the FSA guidance, including specific treatment of chilled fresh beef, lamb and pork. Do not turn the 10-day rule into a blanket label for every vacuum-packed product; establish which guidance applies to the actual food and process.
Temperature control remains essential
Vacuum packing does not make chilled food shelf-stable and it does not rescue food that was unsafe before packing. Maintain the required cold chain and monitor refrigeration as defined by the food-safety system and product controls.
If temperature control fails, assess the affected product using time, temperature, shelf life and the validated process. Do not simply reset the fridge and continue using the original date.
Sous vide adds a controlled heat process
Sous vide normally combines sealed packaging with controlled cooking at a specified time and temperature. Because some sous-vide processes use lower cooking temperatures for longer periods, safety depends on the validated combination of product thickness, starting condition, time, temperature and subsequent handling rather than on the water-bath temperature alone.
Where a sous-vide product will be chilled for later use, rapid controlled cooling, chilled storage, shelf life and reheating or final service become part of the same safety system. A chef recipe is not a substitute for validation of a safety-critical process.
Prevent contamination before sealing
Vacuum packing can preserve the conditions present when the bag is sealed, so good hygiene before packing matters. Control raw and ready-to-eat separation, hand hygiene, equipment cleaning and disinfection, bag handling and contamination from the vacuum packer itself.
If the same machine is used for different food categories, the business should assess cross-contamination risks and have effective separation and cleaning controls.
Label and identify each pack
The kitchen should be able to identify what the pack contains, when it was produced or packed, the applicable use-by or internal control date, storage requirements and any batch or traceability information needed by the food-safety system.
Do not extend shelf life merely because the food has been vacuum packed. Shelf life should be supported by the applicable safe method, guidance and validation.
Validation matters when the process becomes more complex
FSA MyHACCP guidance notes that vacuum packaging creates anaerobic conditions that can favour organisms such as Clostridium botulinum. More complex or extended-shelf-life processes may therefore need technical validation rather than assumptions based on appearance, smell or previous experience.
Where the business cannot demonstrate that its process and shelf life are safe, seek competent technical advice and use current FSA guidance before putting the product into routine production.
Record deviations and corrective actions
Meaningful records may include packing dates, product or batch identification, refrigeration checks, sous-vide time and temperature evidence, cooling checks, shelf-life controls and corrective actions. The exact records should be proportionate to the hazards and controls identified by the business.
If a process limit is missed, isolate affected food while its safety is assessed. Do not automatically re-cook, re-chill, re-pack or re-date a non-conforming product.

Can I set my own shelf life after vacuum packing?
