What temperature should hot-held food be kept at?
Food Standards Agency guidance states that food being kept hot before service should normally be held at 63°C or above. The purpose of hot holding is to maintain already-cooked food at a safe temperature until it is served.
The kitchen should have a practical monitoring method that confirms food remains under control during service rather than assuming that a lit bain-marie or soup kettle means the food itself is hot enough.
Preheat the equipment before adding food
Suitable hot-holding equipment such as a bain-marie or soup kettle should be preheated before food is placed into it. Putting hot food into cold equipment can allow the food temperature to fall while the equipment warms up.
Equipment capacity matters too. Overloading, shallow water levels, open lids, frequent service and unsuitable containers can all affect performance, so the method should work under real service conditions.
A bain-marie is for holding, not reheating
FSA SFBB guidance is clear that hot-holding equipment is for hot holding only. Food should be cooked thoroughly and steaming hot before hot holding begins.
Do not use a bain-marie or similar holding unit as a slow method of bringing cold food back up to temperature unless the equipment is specifically designed for that process and the business has a validated safe method. Reheating needs to be completed properly before the food enters normal hot holding.
What if hot food falls below 63°C?
FSA guidance provides a limited exception where hot food can be displayed below 63°C for up to two hours, but this should only be done once. The business needs to know when that period began so staff can make the correct decision.
At the end of the permitted period, food should be dealt with using the safe options in the business procedure rather than simply resetting the clock. FSA SFBB guidance describes reheating until steaming hot and returning it to hot holding, rapidly chilling it to 8°C or below where appropriate, or discarding it. Food that has exceeded the applicable period should be thrown away.
Do not top up old food with a new batch
When food is being displayed outside normal hot-holding control, FSA guidance warns against mixing newly prepared food into food already on display because the older food may then remain out too long.
Using smaller batches and replacing containers can make time control clearer, improve quality and reduce the amount of food affected if a holding problem occurs.
How should hot holding be checked?
Use a clean and disinfected probe thermometer where temperature verification is required and check the centre or thickest part of the food. Monitoring frequency should be appropriate to the food, equipment, service length and food-safety system.
A useful system identifies the food or holding unit, the result, the time where relevant and the action taken when a control fails. The probe itself also needs to be maintained and checked so readings can be relied upon.
Long services need active management
Hotels, weddings, carveries, buffets and large functions may keep food in service for extended periods. A long service increases the importance of equipment capacity, batch planning, temperature checks, replenishment and clear responsibility for corrective action.
Where food is displayed to customers, contamination and allergen controls also matter. Hot holding temperature is only one part of safe buffet or event service.
What should be recorded?
Records should support the food-safety controls identified by the business rather than creating unnecessary paperwork. Where hot holding is an important control, useful evidence can include equipment or food checked, temperature, time, person completing the check and corrective action.
If the business relies on the two-hour exception, recording or otherwise reliably controlling the start time is particularly important because staff need to know when the permitted period ends.
