Why cooked rice needs careful time and temperature control
Uncooked rice can contain spores of Bacillus cereus. Cooking can kill many bacteria but spores may survive. If cooked rice then spends too long at unsuitable temperatures, surviving spores can germinate and bacteria can multiply or produce toxins.
